Aloha Friday Recipe: Portuguese Cornbread Stuffing

15 ounces Portuguese sausage,
5 ounces each, onion, celery and carrot
1 quart cornbread
1-12 cups chicken broth
Salt and pepper to taste

Dice Portuguese sausage.  Heat canned chicken stock until hot.  Dice carrots, onions, celery and garlic.  Sauté vegetables in olive oil or butter in a Teflon pan while in another skillet cooking the Portuguese sausage.  Drain fat.  Crumple corn bread and mix with vegetables and sausage. Pour hot chicken stock over for texture. Bake at 350 degrees for 25 minutes.

Restaurant Review…Bubba Burger

If you’ve been to Kauai, chances are you’ve either seen a commercial on KVIC or passed Bubba Burger.  There are 2 locations, one in Kapa’a and one in Hanalei across from Ching Young Village.  We were anxious to try this place the first time we went back in 1996 because they just touted these burgers like they were the best thing ever!  You’ve got your Bubba Burger, Double Bubba, “The Slopper”, Italian Sausage and the like.  I have to say…not overly impressed with the burgers.  The better half gave them another shot on the burgers and said they were a little overly greasy.  It’s one of those places that you really should try because we all have our own ideas of what a great burger should be and since it doesn’t break the bank, I’d encourage you to give it a whirl.  But one place we feel they really shine and something we crave is their chili dogs and chili cheese fries.  It’s one of a select few places we may rush to hopping off the plane because of them.  The chili is the perfect consistency, just the right amount of heat- not too little and not too much.  Slather that on with some cheese and onions and you have one of the tastiest gastronomical time bombs on the island.  That being said, it would be smart to load up with Beano or Gas-X prior to that much chili…that’s about as far as I’m going with that one and your traveling companions will thank you.  (Well, they should thank me!)

Now it has to be said if you go to their website you are in for a time trip back to the days when cheesey graphics, midis and ill conceived websites were king.  I believe the copyright on the webpage is 1995 and I’d be willing to be the format hasn’t changed since then.  I suppose it has a charm of sorts but we’d really love to see an updated webpage from Bubba’s with the same sassy content…just organized.   I did notice however that when the now defunct Kihei, Maui location was removed a few years ago, so was the “Bub Club” program where you could print out this little card and receive 10% off.  You could also buy some of their merchandise and receive either a discount or a free drink…can’t remember which.  That’s a shame they did away with that, it made it unique and was more of an incentive for visitors to the islands to go there.  Maybe we were the only people who used it? 

But organized webpage and Bub Club or not, Bubba’s has reasonably priced good food and great locations whether you want to eat in or grab it to go and head across the street to the beach (Kapa’a) or drive a few blocks to the beach (Hanalei).  We recommend you swing by Bubba’s and see what item strikes yer fancy!

kauaigirl.jpgOfficials with the Kaua’i Police Department are asking for the public’s help with an apparent teen runaway case.

According to police, 16-year-old Mahealani Goodwin was reportedly last seen on Oct. 18 leaving Kaua’i High School in a white car driven by her boyfriend.

The teen is 5 feet tall and has brown eyes and brown hair. She has a 2-inch, five-point red star tattoo on her inner right wrist. Goodwin is of Hawaiian descent and has a tan complexion and a small build.

Anyone with information about Goodwin is urged to call police dispatch at 808-241-1711, KPD’s Investigative Services Bureau at 808-241-1696 or CrimeStoppers at 808-241-1887.

Re-thinking how your child’s meal gets packed can reduce trash going to landfills and has some unexpected benefits.

Simple ways to pack a trash-free lunch:

  • Send food in re-usable lunchboxes instead of paper bags (Also, remember if using a soft lunchbox that contains “PVC”, consider testing the bag for lead).
  • Instead of plastic wrap, foil or baggies, pack food in re-usable plastic containers.
  • Consider buying foods in bulk or in larger boxes and packing a portion in re-usable plastic containers.
  • Send drinks in a shatterproof thermos, a re-usable drink container (some are available with ice cores built into the bottle) or send in bottled water and recycle the bottle when it returns home.
  • Try cloth napkins, or re-usable silverware that can be washed at home.

In addition to feeling good about reducing trash, a few added benefits are:

  • Parents save money. Individually wrapped goodies and drinks are premium-priced, often up to 50 percent higher.
  • Parents see leftovers. “Hmm, the healthy sandwich has one bite taken, and every cookie disappeared.” And, many kids snack on leftovers after school.
  • Healthier food choices. Your food and drink options are limitless when you pack in re-usable containers and don’t rely on pre-packaged items, which tend to be processed foods.

Warriors win; Brennan down

Just watched a great game that had the Warriors coming out on top, now making them and Kansas the only remaining undefeated teams in college football!

Toward the end of the 4th quarter, superstar quarterback Colt Brennan was leveled by a Fresno player which should have resulted in a penalty minimum as it looked helmet to helmet.  I’d be lying if for a second I didn’t think I’d just witnessed a career ending injury take place.  As most players for both teams kneeled around him on the field, I shed a tear or two and said a little prayer.  After what seemed like a lifetime, Colt finally stood on his shaky legs and was in obvious pain.  He was taken from the field with the fans chanting “Colt, Colt, Colt….”  As of right now, no update has been given as to whether Brennan is okay or if this will affect the rest of the season.

True Aloha extends its congratulations to the Warriors and good thoughts in hopes Colt is okay.  We’re proud of you all!

Update:  Brennan has a mild concussion and is expected to play in next week’s game.

Aloha Friday Recipe: Mahi Mahi Chowder

1 lb Mahi Mahi
2 large potatoes, cut in 1″ cubes
1 large onion, chopped fine
1 can cream of mushroom soup
1/4 tsp paprika
1 cup milk or cream

Cook Mahi Mahi in water for cover for 10 minutes. Cook potatoes and onion together in boiling salted water. Add 1 cup potato-onion water to cream of mushroom soup diluted with 1 cup milk and heat together. Add potatoes and onion. Add flaked fish and heat together under low flame for 5 minutes.

The quest for the best teriyaki sirloin…

When we came to the islands for our honeymoon, we went to Duke’s Canoe Club on Kauai and I had my first (and certainly not my last) teriyaki sirloin.  I was instantly hooked.  When we went to a decent restaurant, if teriyaki sirloin was on the menu…I was ordering it!  Some of the best I’ve had were at Duke’s, Kimos on Maui, Leilani’s on the Beach, Kalaheo Steakhouse, The Chart House and Hilton Kauai Beach Resort.  Of course the first 3 restaurants are all owned by TS Restaurants so when you get a good formula going, don’t mess with it.  If you know the menu at one of those three restaurants, you know it for all three.  But something perplexes me, why would Kimos yank this delectable item from their menu??  Yep, despite it still being listed on their online menu, we went to get it and they didn’t have it anymore so we left.  Luckily Leilani’s on the Beach had it and it was actually a tad better.  The Chart House is long closed from its idyllic oceanfront location on Kona Bay to make way for the high brow favorite…Hooters.  Yeah.  This beautiful location is now a backdrop for hootin’ and hollerin’ men looking for boobies and we don’t mean the red footed variety.  But if you ask any local, they’ll still reference “turn right just past the old Chart House” so you’d better know it’s on Waterfront Row or you might be screwed direction wise!

I was sad to see that the quality of Duke’s teriyaki sirloin has gone slightly downhill when we were there in May.  I was surprised that the Hilton’s version was actually a little more flavorful.  There’s nothing like being able to taste the ginger and garlic that accompany the shoyu/sugar based sauce.  It’s all a delicate balance which made me wonder…have I had THE best teriyaki sirloin Hawaii has to offer?  That’s where you come in.

Bounty Hunter grants first post scandal interview to Fox

Dog Chapman appeared on Hannity and Colmes last night on Fox in which he gave a teary apology and appeared with his African American pastor Tim Storey.  The 8 month old private conversation which was sold by his paroled son, Tucker to rag mag site The National Enquirer for a rumored $15,000 contained an angry Dog using racial slurs.  When asked what could motivate a son to turn on his father for such a thing, Chapman speculated it could’ve been drug motivated.  Chapman also saw his son’s girlfriend for the first time in an interview she granted the National Inquirer website.  He cried as he watched it and said she was a cute little girl and said “I’m so sorry honey.”

Chapman was blasted by his pastor who said he was shocked when he heard the tape and angry and came at him with that energy but knew that wasn’t the man he knew.  The bounty hunter said whatever he needs to do to make this right, he’ll do.  He’s trying to formulate a plan but needs direction.  He said he knows he’ll never be forgiven and probably doesn’t deserve to be.  In regards to his high rated A&E show Dog the Bounty Hunter, Chapman says when they call he tells his wife to tell them he’s “in the bathroom” because he’s scared to talk to them. 

So far A&E has halted production of the current season and has pulled the show from it’s programming schedule but has stopped short of a full blown cancellation.  Many are speculating the imminent cancellation of the show since the Dog the Bounty Hunter box set that contains 4 discs has been slashed to $20 and has been selling like hotcakes on Amazon.com. 

Time will tell if Dog can do enough to make people believe he is truly sorry, has learned his lesson and can be forgiven.
