Aloha Friday Recipe: Poi Muffins

INGREDIENTS
1 cup poi
2/3 cup milk
2 eggs
1/3 cup vegetable oil
2 cups flour
3 tsp baking powder
¼ tsp baking soda
3 Tsp sugar
½ tsp salt

Preheat oven to 350 degrees. Sift the flour, baking powder, soda, sugar and salt together.
Beat the poi, eggs, milk and oil together. Make a well in the center of the DRY ingredients and add the poi mixture. Gently mix until combined JUST MOIST!

Don’t over mix. Spoon mixture into oiled muffin tins and bake for 30 minutes.
SERVES 12
