Craving of the day…Mac Pie

If you’re from the Big Island or even been to the Big Island and have come across the Mac Pie, the mere mention of those words just put your salivary glands into overdrive. (Wiping mouth) The Mac Pie Factory is now located in the Kona Marketplace which is a great place to browse while you’re in Kona. This pie is a delectable chess pie recipe by the owner’s grandmother made with fresh local ingredients and it shows. Our favorites are the regular Mac Pie (pictured) and the Chocolate Chip Mac Pie. They also have Coconut/Coconut with chocolate chips, Kona Coffee/Kona Coffee with chocolate chips, Butterscotch and Caramel. They’re a little pricey but worth every penny.
Not in the islands? No worries, you can order them online on their website. They have a good shelf life and once you eat one, you’ll be addicted too!

Mauka-(m-ow-kuh)- Toward the mountains
The alphabet contains 12 letters: 5 vowels (a, e, i, o, u) and 7 consonants (h, k, l, m, n, p, w). To simplify pronunciation, sound consonants as in English and break up words so they are easy to say (ie- Humuhumunukunukuapua’a would be pronounced humu-humu-nuku-nuku-apu-a-a)
Pronounce vowels as follows:
a - a in above; e - e in set; i - ee in see; o - o in some; u - oo in moon.
Pronounce vowels marked by a glottal stop (`) quickly ie- o`o sounds like oh-oh! in English.
Stress rising dipthongs (ae, ai, ao, au, oi, ou, eu, ei) on the first letter and end with a short e, i, o or u. ie- oi sounds like oy in soy, ending with a short “i”.
Aloha Friday Recipe: Lup Cheong Frittata

1 tablespoon olive oil
1 large potato, peeled and cut into half inch cubes (1/2 inch)
One half cup onion, chopped (1/2 cup)
2 cloves garlic
One fourth cup lup cheong (chinese sweet sausage), chopped (1/4 cup)
One fourth cup char siu, chopped (1/4 cup)
Salt and pepper to taste
Fresh spinach leaves (optional)
8 eggs
Fresh crab meat (optional)
One fourth cup mixed grated cheese (1/4 cup)
One fourth cup parmesan cheese, grated (1/4 cup)
Parsley, minced for garnish
Boil potatoes until fork tender, Drain and set aside. Cut into one half inch cubes.
In a mixing bowl, whisk eggs and set aside.
In a large pan or skillet, heat oil, add garlic and onions and sauté until onions are translucent. Add lup cheong, char sui, and cooked potatoes until golden brown. Stir in eggs and mix well. Season with salt and pepper.
Put whole skillet in oven at 350 degrees for 10-15 minutes or cook eggs until they are set.
Sprinkle frittata with minced parsley (optional)

Here’s this week’s installment of Val’s Four Foods on Friday.
#1. What’s your favorite beverage containing chocolate or chocolate flavoring? I love chocolate milk or hot chocolate with mini marshmallows.
#2. What’s your favorite chocolate bar? Well I like Milky Way, Snickers, 100 Grand and others but my actual favorite chocolate treat is Lindt Dark Chocolate Truffles. There is NOTHING better chocolate-wise in this world. Heaven in a ball.
#3. What’s the most unusual thing you’ve ever eaten that had chocolate in it? Chocolate covered squid. It’s as disgusting as it sounds but its apparently a big seller for Big Island Candies.

#4. Share a recipe using chocolate.
Easy PMS Cake
Get a chocolate chocolate chip cake mix and bake it in 2 8″ round cake pans. Get 2 cans of chocolate chocolate chip frosting and frost the middle of the 2 cakes and then the outside. Have some milk handy, it’s rich. There will be no one who can resist it, I get tons of requests for it. Can make them in cupcake form if you prefer.
Dog Chapman set to return to the air waves

Get ready ladies…Leland Chapman will be gracing the small screen once again. For fans of the show, reruns of Dog the Bounty Hunter with begin airing Wednesday, June 25th and new episodes will begin airing Wednesday, July 16th on A&E.
Dog’s sidekick Tim “Youngblood” Chapman will not be returning for season five. Chapman (no relation to Dog) was charged with terrorist threatening and his case is still pending at this time.
Air times are 9pmET/PT and 6pm in Hawaii.

If you’re going to be in Hawaii this weekend and want a great way to mingle with the locals, raise money and of course sample some ono grinds at checkpoints along the way, this is the event for you! Invite your family, friends, neighbors, co workers, clients, schools, clubs, visitors/tourists … to join us in a morning of fun, food, fabulous entertainment and a little exercise to help raise funds for Hawaii‘s local charities. All walkers on Oahu, Big Island, and Maui are required to have a minimum of $35 for adults and $25 for those under 18 years of age (regardless of age including infants); and Kauai has a minimum of $35 for all walkers regardless of age to be collected in donations to participate in the CHARITY WALK.

Aloha Friday Recipe: Char Siu Manapua (Bao)

Ingredients:
3 1/2 cups flour
1 Tablespoon shortening
1/4 cup sugar
1 pkg active dry yeast
1 cup warm water
char siu filling
Put three cups of the flour into a bowl. Cut in shortening. Stir in two tablespoons of the sugar. Combine the remaining two tablespoons sugar with the yeast and add 1/3 cup of the warm water. Stir until yeast is dissolved. Add the remaining 1/2 cup flour; mix well. Combine flour mixture, yeast mixture and remaining 2/3 cup water. Knead on lightly floured board five minutes or until the dough is smooth and elastic. Place dough in a greased bowl and divide into 18 portions. Oil hands and flatten pieces of dough. Put about 1 tablespoon filling in center of dough. Form buns by pulling dough up and around filling. Pinch and seal seams. Place on squares of waxed paper. Let rest 20-30 minutes. Place on rack and steam 15 minutes. Makes 18 buns.
