Hawaiian word of the week

Nani-(nah-nee)- Beautiful

The alphabet contains 12 letters: 5 vowels (a, e, i, o, u) and 7 consonants (h, k, l, m, n, p, w). To simplify pronunciation, sound consonants as in English and break up words so they are easy to say (ie- Humuhumunukunukuapua’a would be pronounced humu-humu-nuku-nuku-apu-a-a)

Pronounce vowels as follows:

a - a in above; e - e in set; i - ee in see; o - o in some; u - oo in moon.

Pronounce vowels marked by a glottal stop (`) quickly ie- o`o sounds like oh-oh! in English.

Stress rising dipthongs (ae, ai, ao, au, oi, ou, eu, ei) on the first letter and end with a short e, i, o or u. ie- oi sounds like oy in soy, ending with a short “i”.

Aloha Friday Recipe: Hawaiian Turkey Burgers

Ingredients:
1 can (8 ounces) sliced pineapple
1/2 cup dry bread crumbs
1/2 cup sliced green onions
1/2 cup chopped sweet red pepper
1 tablespoon reduced-sodium soy sauce
1/4 teaspoon salt
1 pound lean ground turkey
1/4 cup reduced-sodium teriyaki sauce
4 sesame hamburger buns

Directions:
Coat grill rack with cooking spray before starting the grill. Drain pineapple, reserving 1/4 cup juice (discard remaining juice or save for another use); set pineapple aside. In a bowl, combine the bread crumbs, onions, red pepper, soy sauce, salt and reserved pineapple juice. Crumble turkey over mixture and mix well. Shape into four patties.

Grill, covered, over medium heat for 3 minutes on each side. Brush with teriyaki sauce. Grill 4-6 minutes longer on each side or until meat is no longer pink and a meat thermometer reads 165°. Grill pineapple slices for 2 minutes on each side, basting occasionally with teriyaki sauce. Warm buns on grill; top each with a burger and pineapple slice. Yield: 4 servings.

Yes, I know it’s Four Foods on Friday but in case anyone wants to join in the fun at Val’s place then you can hop on over and post your answers tomorrow, Friday.  Got it?  Here’s this week’s questions:

#1. Name one cookbook, cooking website or food blog that you frequently use. 

I collect cookbooks but don’t use them TOO often.  I know, weird.  But one I always use come holiday time is the tried and true Better Homes and Garden Cookbook that almost everyone started out on.  Great sugar and gingerbread cookie recipes.

#2. Do you watch any cooking shows on tv? Which ones?  I live for Food Network!  (Which you would know if you saw I was at a taping of a Food Network show…hee hee)  I stay away from Rachael Ray and Bobby Flay because both annoy the heck out of me even Paula Deen is starting to grate a bit (it’s the laugh) but I’m pretty game for anything else.  I have an unhealthy obsession for the show Diners, Drive In’s and Dives and while it’s not a traditional cooking show, I have picked up some good tips from it!  (I’m still really peeved that they gave Emeril the ax)

#3. Are you in a cooking rut?  Name a food or dish that you’d like to find a recipe for. 

Not really but I’m always looking for a new way to make chicken.  I’m getting sick of stir fries, quesadillas or just baked/fried chicken so anyone things they’ve got a pretty slick way of cooking up the cluckers, feel free to leave a recipe!

#4. Share a recipe created by somebody else that you haven’t tried but would like to.

I’ve got a personally autographed cookbook from Rocco DiSpirito that I would like to make something from.  Some of his ingredients require a little digging but I need to get off the rump and try them.

Aloha Friday Recipe: Haupia with Pineapple

1 1/2 cups coconut milk
1 1/2 cups water
1/2 cup sugar
3/4 cup corn starch
1/2 cup chopped fresh pineapple

Combine cornstarch, sugar, water, and coconut milk. Stir until smooth. Stir over medium heat until thickened. Lower heat and continue cooking for 10 minutes. Stir in fresh pineapple and pour into a flat pan. Refrigerate until set.
