Aloha Friday Recipe: Kulolo

INGREDIENTS:
1 large taro root, grated
3 coconuts, grated
1 cup water
2 cups coconut water
2 tsp brown sugar

PREPARATION:
Mix taro with coconut meat. Add water, coconut water, and brown sugar. Put in baking pan.  Top with butter. Bake 1 hour in 350 degree oven. You may wish to partially cook the taro before grating. Cut in chunks and boil slightly. Do not overcook.

There’s time to participate in this week’s spudalicious Four Foods on Friday.  Swing on by Val’s Place to play along.

#1. Potato Chips. What kind of chips are your favorite?
Hmm, I’m not a big chip eater.  When I do it’s either Sun Chips, Doritos, BBQ chips or those salt and pepper kettle chips.  It just depends on what kind of mood I’m in when we do have them for a cookout.

#2. What’s your favorite thing to dip chips in?
Without a doubt, Kroger dip or nothing at all.

#3. What’s your favorite way to eat a baked potato?
I like twice baked potatoes but typically I’ll use butter, black pepper and A1 steaksauce.  Mmmm.

#4. How do you make mashed potatoes?
Yukon Gold potatoes for no skin and red skin potatoes for skins on.  Boil ‘em up, add a about 1/4 c. butter and heavy whipping cream to the consistency you prefer.  It HAS to be cream to get that gourmet taste, they’re worth the calories!  LOL  If you REALLY wanna go gourmet, add a head of roasted garlic and freshly chopped parsley or chives.  Drool…now I’m hungry.

Whether you live in Hawaii or are visiting, many of us swim in natural pools and waterfalls.  While this makes for what many of us consider the quintessential experience in paradise, it also needs to be mentioned that care should be exercised when swimming in streams and fresh water waterfalls/pools.   Leptospirosis is a nasty bacterial disease that thrives in such environments and it’s not a fun experience.  It’s typically caused by the urine of infected animals that have gone in the streams that feed these pools and waterfalls.  You need to take care to not ingest the water, get it in your eyes, nose or open cuts.  Symptoms can range from fever, chills, jaundice, vomiting, diarrhea and even be as severe as kidney failure if not treated.

Spend an hour with renowned artist Dale Zarella as he shares with you his extensive experience with green sea turtles.

Zarella is a sculptor/painter and uses a variety of mediums such as wood, stone, bronze, and canvas to create his works of art. He has made many contributions to the preservation of sea turtles as a board member of the World Turtle Trust and director of one of Hawaii’s few turtle sanctuaries.

Time: 6:30-7:30pm
Location: Open Ocean Exhibit, enter through Front Gate

Hawaiian word of the week

Poi-(poy)- Cooked, mashed taro root that is pounded into a purple paste of varying thickness. Taste is bland and best used as a side dish to be mixed with salty meats.

The alphabet contains 12 letters: 5 vowels (a, e, i, o, u) and 7 consonants (h, k, l, m, n, p, w). To simplify pronunciation, sound consonants as in English and break up words so they are easy to say (ie- Humuhumunukunukuapua’a would be pronounced humu-humu-nuku-nuku-apu-a-a)

Pronounce vowels as follows:

a – a in above; e – e in set; i – ee in see; o – o in some; u – oo in moon.

Pronounce vowels marked by a glottal stop (`) quickly ie- o`o sounds like oh-oh! in English.

Stress rising dipthongs (ae, ai, ao, au, oi, ou, eu, ei) on the first letter and end with a short e, i, o or u. ie- oi sounds like oy in soy, ending with a short “i”.

The Red Rocker Sammy Hagar has opened Sammy’s Beach Bar and Grill in the Kahului airport as part of their $2.3 million remodel.  100% of the profits will go to local Hawaii charities via Hagar’s Red Rocker Foundation, which supports children’s organizations.  I tried to find a menu but couldn’t come up with one.  I’ll be there in about 10 days so if they have a take out menu, I’ll scan and post it.

Aloha Friday Recipe: Chicken Adobo

INGREDIENTS:
3 pounds chicken thighs, cut into serving pieces
1/2 cup white vinegar
1/2 cup soy sauce
1/4 tsp peppercorns, crushed
1 teaspoon brown sugar
5 garlic cloves, crushed
3 bay leaves
Salt to taste

PREPARATION:
Combine all ingredients in a pan, cover, and allow to marinate one to three hours.  Bring to a boil, then lower heat and simmer for 30 minutes. Uncover the pan and allow to simmer for an additional 15 minutes or until most of the liquid has evaporated and the chicken is lightly brown.

Serve with white rice.
Serves: 4 to 6

Almost anything can be cooked adobo style: beef, fish, shellfish, and vegetables, in addition to pork or chicken, are good.

Four Foods on Friday tomorrow (#43)

This week Val has Olympic fever and her questions reflect that.  It reflects my current lifestyle changes too.  (Down 45 pounds since mid-March!)  There’s still time to swing by Val’s place and participate in Fours Foods on Friday, don’t be shy!

#1. What do you drink to rehydrate in the heat or after working out?
Cold water tastes the best.  I’ll stick my big 55oz water bottle in the freezer for 3 hours and then crack up the ice so it stays cold for hours.

#2. What do you eat to help boost or create energy?
I’ve recently discovered Kashi’s Mountain Medley granola mix that has rolled oats, almonds, dried cranberries and some other stuff with a touch of honey and instead of eating it as a cereal, I eat it as a snack to stave off hunger.  (They say there’s coconut flakes but I don’t taste them and I HATE coconut flakes!)  I am SO glad I took advantage of their free sample offer when I saw it otherwise I never would’ve spent the money to try it on my own so if you ever see a sample ad for a healthier product, order it!  You’ve got nothing to lose!

#3. What’s the healthiest snack you eat?
See above but also I keep cut up veggies on hand.  My go to snack though is usually a small bowl of cereal but I’m really not a snacker so it’s not as big an issue for me as it is for some.  (This is why it’s hard for me to implement the whole 5-6 small meals concept)

#4. Share a recipe or instructions for your ideal three course meal.
Oh, I suppose this should be healthy?  LOL  I tried my wheat flatbread pizza as an appetizer last weekend and it was FABULOUS and will become a staple.  To lighten it up from the marscapone cheese I would use a fat free ricotta with herbs and roasted garlic spread on a wheat pita and sprinkled with a little asiago cheese.  (Full of protein and whole grain with a little fat for good measure)  Lean boneless, skinless chicken breast with lemon and fresh rosemary. herbed red skin potatoes and snow peas.  For dessert, sugar free banana cream pudding with fresh bananas and light Cool Whip.  Great.  Now I’m hungry! 

Hawaii IPTV is slowly redeeming itself

You may remember this post where I was not completely convinced that Hawaii IPTV was worth the money yet.  Since then, they’ve added a few shows…none that I’ve been overly impressed with but I’m sure there’s an audience for them.  I would be happier if they got licenses for more current episodes of shows they already feature.  Today I got the following update that *may* just cause me to renew my subscription
