Aloha Friday Recipe: Roasted Pineapple Bread Pudding

Ingredients

3 cups heavy cream
1/2 cup granulated sugar
3/4 tsp vanilla extract
3 eggs
3 egg yolks
1 lb loaf brioche or Hawaiian Sweet Bread
1/2 cup banana puree
1/2 tsp cinnamon
1/4 tsp nutmeg
1/2 tsp ground ginger
1 1/2 cups roasted pineapple

Heat up the cream, sugar, vanilla and spices. Cut the bread into cubes and place into a bowl. Put the egg yolks and the eggs together. Once the cream is hot, temper your egg mixture. Pour the mix through a sieve over the bread cubes. Add the puree. Mix and then let the mixture sit for 15 minutes. Add in roasted pineapple. Pour into a greased and papered pan. Cook at 300°F for 40 minutes. Turn and give it 10 more minutes.

#1. Do you prefer to eat Chinese food in the restaurant or to have it delivered?
The only place we ever went for sit down Chinese was China Coast which was an awesome restaurant chain in the 90′s.  How I miss their pork ja ja mein and if anyone out there has the recipe for that sauce, I would be ever so grateful.  SOMEONE out there has to have it!   Other than that, we usually just pick it up and bring it home since we have so many so close to us.
#2. Do you prefer wonton or egg drop soup?
Won ton soup but it doesn’t compare to saimin.  Mmmm.

#3. What flavor fried rice is your favorite?
There are other flavors of fried rice?  I guess I’m a purist then but I rarely get fried rice, always steamed.  Fried rice is usually disappointing.  I make a good Spam Pineapple Fried Rice though. 

#4. Describe your favorite item on the Chinese food menu.
General Tso’s chicken extra extra spicy.  The best is when they chop the chiles up real small and add it to the sauce.  But I really hate it when some places use “jointy” chicken.  It’s like they batter fry the worst parts of the chicken at some restaurants and all it takes is one time of that and it’s crossed off the list for us.

Monday-Po’akahi

The alphabet contains 12 letters: 5 vowels (a, e, i, o, u) and 7 consonants (h, k, l, m, n, p, w). To simplify pronunciation, sound consonants as in English and break up words so they are easy to say (ie- Humuhumunukunukuapua’a would be pronounced humu-humu-nuku-nuku-apu-a-a)

Pronounce vowels as follows:

a – a in above; e – e in set; i – ee in see; o – o in some; u – oo in moon.

Pronounce vowels marked by a glottal stop (`) quickly ie- o`o sounds like oh-oh! in English.

Stress rising dipthongs (ae, ai, ao, au, oi, ou, eu, ei) on the first letter and end with a short e, i, o or u. ie- oi sounds like oy in soy, ending with a short “i”.

Aloha Friday Recipe: Island Style Vegetarian Chili

Ingredients

1 tablespoon salad oil
6 cloves garlic, chopped
1 small onion, diced
2 stalks celery, diced
1 small zucchini, diced
1 long eggplant, diced
1 can (4 oz) chopped olives
1 can (14 1/2 oz) whole tomatoes, undrained and chopped
1/2 block (10 oz size) firm tofu, cubed
1 can (15 oz) kidney beans, undrained
1 can (14 1/2 oz) vegetable broth
2 cans (8 oz size) tomato sauce
2 tablespoons hoi sin (Chinese soybean sauce)
1 teaspoon ko choo jung (Korean hot sauce)
Worcestershire sauce, hot pepper sauce, garlic salt, and lemon pepper to taste

Instructions

In a saucepot, heat oil. Sauté garlic, onion, and celery. Stir in zucchini, eggplant, and chopped olives; cook for 1 minute. Add the tomatoes, tofu, beans, broth, tomato sauce, hoi sin, ko choo jung, and seasonings. Cover, bring to boil, lower heat and simmer for about 45 minutes. Makes 12 servings.

Four Foods on Friday 62

Here’s this week’s edition of Val’s Four Foods on Friday meme.  There’s still time if you’d like to play along.

#1.  Waffles. Do you usually eat frozen or homemade?

Not really a waffle eater but when I do, it’s frozen.

#2.  Eggs. Do you buy brown, white, or it doesn’t matter?

White eggs.  I’ve bought brown before but the hubby freaked and said it looked too much like poo orbs.

#3.  Oatmeal. Do you usually make instant or cooked?

Instant and usually maple and brown sugar flavored.

#4.  Bacon. Share instructions or a recipe that you use bacon in.

Mine’s pretty simple.  Loaded mashed potatoes.  Make regular mashed potatoes, add sharp cheddar cheese, crumbled crispy bacon and mix together.  If you like sour cream you can put sour cream and chives on top.

Polihale Beach on Kauai closed indefinitely

According to the Garden Island News heavy flooding has damaged a bridge and road that leads back to the remote Polihale State Park Beach.  This road is rarely in good condition anyway but the damage is pretty significant.  The DLNR says the park is cloased “indefinitely until significant repairs are made to areas of the park that were damaged by recent heavy rains.”  This was close to the same statement made when the road going to the beautiful Pu’u O Kila lookout over Kalalau Valley was closed…back in 2003.  So if their snappy timeline on that project is any indicator, visitors should probably cross Polihale off of their to do list on their Kauai vacation.  If I seem a little cranky about the Pu’u O Kila lookout, you can see why in this post.

Aloha Friday Recipe: Firecracker Noodle Salad with Pineapple-Ginger Dressing

Ingredients

Firecracker Noodle Salad

Salad:

1 head romaine, chopped
2 cups cooked soba (buckwheat) noodles
1 cup shredded carrot
1 cup shredded daikon (white radish)
1 Japanese cucumber, julienne
1 red bell pepper, diced
1 yellow bell pepper, diced
1 cup shredded red cabbage

Pineapple-Ginger Dressing:

1 cup rice vinegar
1 cup crushed pineapple
1/4 cup light soy sauce
1/4 cup turbinado or brown sugar
1/2 cup diced tomato
1/4 cup minced yellow bell pepper
2 tablespoons minced red onion
1 1/2 teaspoons grated ginger root
1 1/2 teaspoons dried tarragon leaves
White pepper to taste

Instructions
Salad: Attractively arrange all ingredients in a salad dish. Just before serving, pour Pineapple-Ginger Dressing over salad.

Dressing: In a bowl, combine all ingredients; whisk until well blended. For a finer texture, dressing can be blended. Chill for several hours or overnight. Serve over greens, pasta, or meat.

Makes 8 servings.
