Sheraton Keauhou Bay Resort to foreclose

For those of you who may have reservations at the Sheraton Keauhou Bay Resort on the Big Island after July 31st, you may want to contact the hotel or consider changing to another hotel.  It is being auctioned off on July 31st after the owner defaulted on the mortgage.  While some think the hotel likely wouldn’t close and they are “expected” to continue business as usual, you should decide if you are personally comfortable with that.

Blue- uli (no exact equivalent)

The alphabet contains 12 letters: 5 vowels (a, e, i, o, u) and 7 consonants (h, k, l, m, n, p, w). To simplify pronunciation, sound consonants as in English and break up words so they are easy to say (ie- Humuhumunukunukuapua’a would be pronounced humu-humu-nuku-nuku-apu-a-a)

Pronounce vowels as follows:

a - a in above; e - e in set; i - ee in see; o - o in some; u - oo in moon.

Pronounce vowels marked by a glottal stop (`) quickly ie- o`o sounds like oh-oh! in English.

Stress rising dipthongs (ae, ai, ao, au, oi, ou, eu, ei) on the first letter and end with a short e, i, o or u. ie- oi sounds like oy in soy, ending with a short “i”.

Aloha Friday Recipe: Oriental Lamb Chops with Rotelli Pasta

Serves 4 to 6

2 or 3 lamb chops per serving (8-18 chops total)

MARINADE:
1/2 cup shoyu
3/4 cup garlic, minced
1 Tbsp. fresh ginger, minced
2 cups brown sugar
1/2 tsp. chili flakes
1/2 cup basil, minced
1/2 cup Chinese parsley, minced
Salt to taste

Combine marinade ingredients, massage into meat for 5 to 10 minutes, then let marinate 4-6 hours in refrigerator. Broil to perfection (about 2 to 3 minutes per side for medium rare, or to your liking.)

Rotelli Pasta:

2 tbsp. butter
4 tbsp. olive oil
1 1/2 tbsp. garlic, minced
1 medium carrot, julienne
2 medium zucchini, julienne
2 cups shiitake mushrooms, julienne
1/2 cup Chinese parsley, coarsely chopped
12 oz. bag rotelli, cooked according to package direction, drained
6 cups heavy cream
salt and pepper, to taste
3/4 cup grated Parmesan cheese

In a large saucepan, heat butter and olive oil over medium-high heat, cook garlic for about 1 minute, without browning, then add vegetables and stir-fry 2 to 3 minutes. Add drained cooked pasta and stir-fry another minute. Add heavy cream, bring to a boil, then immediately reduce to a simmer. Adjust seasoning with salt and pepper. Just before serving, fold in 3/4 cup Parmesan cheese and let cook 1 minute.

Serve in large pasta bowls with 2 or 3 lamb chops on top, garnished with sprigs of fresh basil.

#1. Clair’s question. What’s the biggest kitchen blunder you’ve made?
Anything I’ve made for my inlaws at their place.  I don’t know if it was the pressure I put on myself or what but it seemed like my cooking prowess would go right out the window when I tried to cook to impress!  Sigh

#2. What’s your favorite snow day beverage?
Hot chocolate.  A scoop of Ghirardelli Hazelnut and a packet of dark chocolate Swiss Miss with marshmallows.  YUM!

#3. What’s your favorite way to eat celery?
I usually dip it in french onion dip but occasionally I’ll put peanut butter and raisins on it for “ants on a log.”

#4. What’s the most most unappealing looking food you can think of?
Sauerkraut.  DISGUSTING!

Breaking News: Hawaii IPTV to terminate service

It is with heavy heart that we pass along an email received from the folks at Hawaii IPTV.

Aloha,
It is with great regret that we inform you that Hawaii IPTV will be ending services to all of our
customers effective July 1, 2009.

For those of you who have paid for your annual subscriptions up front, we will credit the prorated amount of your unused months of subscription to your credit card. NeuLion, Inc. will be handling the processing of credits to your credit card. Refunds for subscriptions will be issued during the first two weeks of July. Should you have any questions regarding your credit card refunds, please contact Patti Kelly at 808-262-0377.

For those of you on our monthly payment plan, your credit card was not charged for July services, so a refund is not applicable.

We truly enjoyed having you as a customer and deeply appreciate your patronage and support.

Aloha Friday Recipe: Brie and Macadamia Stuffed Mushrooms

1 pound large mushrooms, cleaned
1 tablespoon freshly squeezed lemon juice
1 tablespoon butter
1 tablespoon sour cream
1/4 cup finely chopped macadamia nuts
3/4 teaspoon salt
1/2 teaspoon freshly ground pepper
1/4 teaspoon fines herbs
4 ounces Brie cheese

Pull stems out of mushrooms and place mushroom caps on a broiling pan. Finely chop stems and toss with lemon juice. In a sauté pan, melt butter over medium heat. Add chopped stems and sauté until liquid evaporates. Stir in sour cream and sauté until mixture appears almost dry. Transfer mushroom mixture to a bowl. Stir in macadamia nuts, salt, pepper and fines herbs. Let cool.

Trim the rind off the Brie and discard the rind. Finely dice the Brie and stir into the mushroom mixture.
Preheat the broiler. With a small spoon, fill the mushroom caps with the stuffing. Broil until bubbly and golden brown. SERVES 6

I don’t like cherries either!  I suppose I’m going to have to be lame and say get some good Tahitian vanilla or dulce de leche ice cream, dark chocolate syrup, split a banana in half, lite whipped topping and put it all in a fancy bowl and top with a cherry.  YUM!
