Fire hits Coco Palms

The upper portion of the old retail site on the Coco Palms property was destroyed early Thursday causing about $80,000 worth of damage. Since there is no power to the site, this was obviously started by someone and the fire is under investigation.

Aloha Friday Recipe: Sweet and Savory Baked Chicken

4 sprigs fresh tarragon (2 sprigs chopped, 2 whole sprigs for roasting), plus more for garnish
Course salt and freshly ground pepper
1 whole chicken (about 4 1?2 pounds), cut into pieces
2 cups chopped fresh Maui Gold pineapple
8 shallots (2 coarsely chopped, 6 halved lengthwise)
2 tablespoons rice-wine vinegar
1?2 teaspoon sugar
1 tablespoon unsalted butter
Preheat oven to 425 degrees. Stir chopped tarragon, 1 teaspoon salt, and 1?4 teaspoon pepper in a small bowl. Rub mixture all over chicken. Transfer to a large roasting pan, arranging chicken so pieces are not touching. Refrigerate until ready to bake (up to 1 day).
Put pineapple, chopped shallots, vinegar, sugar, and 1?2 teaspoon salt into a food processor. Process until mixture is slightly chunky, about 2 minutes.
Spread pineapple mixture over chicken. Top with dabs of butter. Add the remaining tarragon sprigs and 6 shallots to roasting pan. Bake chicken, basting with pan juices occasionally until skin is golden, about 50 minutes.

Pineapple production to cease on Valley Isle

It’s with a heavy heart to report that Maui Land and Pineapple have announced that they are shutting their doors after almost 100 years. Planting has been ceased immediately and the harvest will be done by the end of the year. They cite having lost $115 million on the agriculture business since 2002 but invested $20 million in a fresh packing facility and could not continue based on those numbers. Maui Land and Pineapple also announced they would be restructuring operations of the Kapalua Resort in West Maui which is part of its Kapalua Land Company subsidiary. As a result of this closing, close to 300 employees will be without jobs and Oahu as the distinction of the only major pineapple producer in the United States. This is a real loss not only for the island of Maui but for those who have ever had a Maui Gold pineapple. They were quite simply the best pineapples on the planet and will be sorely missed!

Tradition- mo’olelo (pronounced mo-oh-leh-low)
The alphabet contains 12 letters: 5 vowels (a, e, i, o, u) and 7 consonants (h, k, l, m, n, p, w). To simplify pronunciation, sound consonants as in English and break up words so they are easy to say (ie- Humuhumunukunukuapua’a would be pronounced humu-humu-nuku-nuku-apu-a-a)
Pronounce vowels as follows:
a – a in above; e – e in set; i – ee in see; o – o in some; u – oo in moon.
Pronounce vowels marked by a glottal stop (`) quickly ie- o`o sounds like oh-oh! in English.
Stress rising dipthongs (ae, ai, ao, au, oi, ou, eu, ei) on the first letter and end with a short e, i, o or u. ie- oi sounds like oy in soy, ending with a short “i”.
Aloha Friday Recipe: Wild Rice Turkey Casserole

Looking for a way to use that leftover turkey other than sandwiches?
1 (6 ounce) package long grain and wild rice mix
3 cups cubed cooked turkey
1 (10.75 ounce) can condensed cream of chicken soup, undiluted
1 (8 ounce) can sliced water chestnuts, drained and halved
3/4 cup water
1/4 cup chopped onion
3 tablespoons soy sauce
1 cup soft bread crumbs
1 tablespoon butter or margarine, melted
Prepare rice according to package directions. Stir in the turkey, soup, water chestnuts, water, onion and soy sauce. Transfer to a greased 2-qt. baking dish. Cover and bake at 350 degrees F for 30 minutes. Uncover. Toss bread crumbs and butter; sprinkle over the top. Bake 15-20 minutes longer or until bubbly and golden brown. Let stand for 15 minutes before serving.

Pumpkin pie. Do you make it yourself or buy one already made?
If I’m the one in charge of bringing pies (which is rare) then I make it. Store bought never has enough spice for my taste. Oh and Cool Whip to top it! Yum! (To see the recipe I use see last week’s Aloha Friday recipe)
Where are you eating Thanksgiving dinner this year?
At Grandma’s house. They were planning to go to Florida early this year and miss it but I threw a hissy so they’re staying! Hee hee. (Hey, gotta enjoy the traditions of family while they’re still here! I realize how lucky I am at my age to still have grandparents and want to enjoy them!)
Turkey. Do you like white meat or dark meat?
White. Dark is just gross and fatty.
What’s your favorite Thanksgiving food?
I love stuffing but rarely find it to be done the way I like. I like it moist inside with that slight crust on the outside. It’s very delicate balance that few can pull off, even me. Sigh
